泰式肉碎生菜包 Thai minced pork with lettuce wrap

-免治豬肉Minced pork 260克 260g
-魚露Fish sauce 半湯匙 1/2 tbsp
-生抽Sou sauce 半湯匙 1/2 tbsp
-糖Sugar 一茶匙 1tsp
-生粉Corn starch 一茶匙 1tsp
-蒜頭garlic clove 3粒 3grain
-乾蔥頭Shallot 2粒 2grain
-檸檬葉lemon leaves 4片 4 pieces
-香茅lemonglass 半支 half
-指天椒Chill padi 2條 2pieces
-金不換Thai Basil 適量 handful
-生菜lettuce 一個 one
-青檸lime 一個 one

1)免治豬肉放入網鍋加水
Place minced pork in the simmering basket and add water.

2)設定5分鐘/37度/速度4跑活水清潔
Set for 5 minutes/37 degrees/Speed 4 to do the waterspa.

3)沖水瀝乾水之後用廚房紙印乾
After rinsing, drain the water and pat it dry with kitchen paper.

4)加入魚露,生抽,糖,生粉醃製10分鐘
Add fish sauce, soy sauce, sugar, and cornstarch to marinate for 10 minutes.

5)期間準備配料,蒜頭切粒乾蔥頭切片,金不換取葉
While waiting , let’s prepare the ingredients: mince the garlic, slice the shallots, and take out the Thai basil leaves.

6)檸檬葉去中間支線,卷起切細絲
Remove the central vein from the lemon leaves and roll them up before finely slicing them into ribbons.

7)香茅切半
(如不想咬可再切粗塊,最後煮完夾起更佳)
Cut the lemongrass into half
(If you don’t want to bite them, you can cut them into larger chunks, which can be removed later after cooking.)

8)指天椒切粒(怕辣可去核)
Dice the chili padi (remove the seeds if you prefer less heat).

9)主鍋放入蒜頭乾蔥頭及一圈油
Put garlic, shallots, and a drizzle of oil into the mixing bowl.

10)設定3分鐘/120度/速度1爆香
Set for 3 minutes/120 degrees/Speed 1 to cook.

11)平均放入免治豬肉
Evenly distribute the minced pork into the mixing bowl.

12)再放入香茅,檸檬葉及指天椒
Add the lemongrass, lemon leaves, and chili padi.

13) 設定4:30分鐘/Varoma/反刀0.5爆香
Set for 4:30 minutes/Varoma/Reverse speed 0.5 to cook.

14)倒數最後1分鐘,速度調高至反刀1.5
In the last minute, increase the speed to 1.5 with the blades in reverse.

15)從量杯蓋位放入金不換
From the measuring cup lid, add the Thai basil.

16)再放上青檸汁調味,完成!
Finally, season with fresh lime juice. Done!
