琥珀合桃 Candied Walnuts

-合桃Walnuts 200克 200g
-冰糖Rock sugar 50克 50g
-蜜糖Honey 45克 45g
-白芝麻White sesame 40克 40g
-水Water 60毫升 60ml

1)200克合桃放入主鍋加水
Put 200g of walnuts into the simmering basket and add water.

2)設定熱水模式100度煮滾
Set the kettle mode to 100 degrees and bring it to a boil.

3)煮滾後再設定3分鐘/100度/速度4
After boiling, set 3 minutes/ 100degree /speed 4.

4) 這個步驟可以去除合桃的苦澀味
This step helps remove the bitterness from the walnuts.

5)合桃沖水數次,隔水備用
Rinse the walnuts several times with water and set them aside.

6)放入空氣炸鍋或焗爐160度5分鐘,期間翻面數次至乾身
Place the walnuts in an air fryer or oven at 160 degrees for 5 minutes, flipping them occasionally until they are dry.

7)主鍋放入冰糖,蜜糖,水
Put rock sugar, honey, and water into the mixing bowl.

8)設定8分鐘/varoma/速度1混合
Set 8 minutes/varoma/speed 1 to mix.

9)待冰糖完全溶化(大概4分鐘)即可按暫停按鈕,然後放入合桃
Wait for the rock sugar to completely dissolve (approximately 4 minutes), then press the pause button and add the walnuts.

10)重回手動模式頁面,設定4分鐘/Varoma/反刀1 (打開量杯蓋)
Go back to the manual mode page and set the cooking time to 4 minutes/ Varoma /reserve speed 1(with the measuring cup lid removed).

11)倒數最後1分鐘從量杯蓋倒入芝麻
In the last minute, add sesame seeds from the measuring cup lid.

12)琥珀合桃混合完成
The mixture of candied walnuts is ready.

13)可用刮刀棒在底部旋轉數圈確保糖漿沾滿合桃
Use a spatula to rotate a few times at the bottom to ensure that the syrup coats the walnuts evenly.

14)倒出平均放在有牛油紙的焗盤上
Pour the mixture onto a baking tray lined with parchment paper, spreading it evenly.

15)放入已預熱的焗爐160度20分鐘至金黃色
Place it in a preheated oven at 160 degrees for 20 minutes or until golden brown.

16)完成後放涼就會變脆喔!
Once done, let it cool, and it will become crispy!
